I received more comments on this recipes than I ever would have expected. That’s not to say it’s not absolutely delish, but I was not anticipating the level of excitement over it. I actually threw it together as a quick, one-pot dinner for Mark and I, and we both thoroughly enjoyed it. I’m thrilled to share it and hope you’ll give it a try. It’s a perfect, light weeknight dinner. It’s also extremely easy and since it’s one pot – the clean-up is a sinch! The leftovers are also divine. I may have liked it more the second day.
Also, one quick note – if you don’t feel like marinating the shrimp ahead of time, it’s no biggie to skip this step. I enjoyed the flavor of the marinated shrimp and even added the left over marinade to the pot, which I think gave the dish an additional flavor component. But again, it’s totally fine to skip this step and just follow the instructions following the marinade section of the recipe. Your call!
