If the name of this dish doesn’t get you excited, I don’t know what will. I fell in love with this meal after having it at an Indian restaurant in London. I knew I had to create a version myself. Fortunately two of my favorite cookbook authors, Laura Lea Goldberg and Maria Emmerich, adore this dish as well and found ways to “healthify” this Indian staple. I give recipe credit to both of them, who each feature Indian Butter Chicken recipes in their latest cookbooks. I used a combination of the two to create my own adaptation, which is quite divine if you ask me (or my “refined palate” husband).
I made this dish for my twin sister, Amy, when she returned home after having her baby. She and her husband could not get enough. Amy said it was the best meal she could imagine at that time – hearty, nourishing and overall soothing – just what a new mama needs after the marathon called birth and the days that are to come.
I added broccoli to my recipe, which is a variation from the traditional Indian butter chicken dish. I always like to incorporate greens whenever possible. So your choice – add it if you please.
Enjoy this one! I have a feeling you’ll return to it time and time again.
Ps, the thing that cracks me up about the name of this dish is that it does NOT actually include butter. So fear not, if dairy is not your thang – no butter here!
