I love the heartiness of this dish. It feels like sitting down to a bowl of your grandmother’s rich, delicious spaghetti. It brings me back to childhood, however this dish leaves out some of the potentially unhealthy (inflammation-causing) ingredients used in typical ragu recipes (i.e. heavy cream / cheese).
You’ll see I give a couple “swap out” options in this recipe – swapping out half of the mushrooms for ground turkey is definitely an option if you’re feeling meat with this dish. Also, feel free to use whichever type of noodle is calling to you that day. Although I’ve always used zucchini noodles with this recipe, and love it that way, the variations I suggest will work as well.
